This thesis is based upon the study of 160 000 animal bones issued from 23 late iron-age sites excavated in the Auvergne region of central France. The assemblages represent different types of archaeological contexts (farms, aristocratic settlements, agglomerations, oppida, religious/ritual zones and funeral areas) which enable us to study their role in the domestic, craft and sacrificial spheres.
